reader Posted 32 minutes ago Posted 32 minutes ago I've observed the same thing at FL. Sometimes the egg arrives crispy around the edges while other times it's more like a poached egg. I chalk it up to the cook's preference or customer's request. When Thais are presented with the latter, they'll typically mash the egg into the hot rice which then transforms the texture.
