Will we find out in 45 more threads? I have the bread slicer, but you also need an electric knife. I left both behind because they run on 110-volt. I always make the small loaf because I can't eat that much bread. But when I do, I'd like to try making pumpernickel. It is the lowest bread listed on the glycemic index, next to rye. Here is a link to a recipe. I found another link to an article about why this bread is good for diabetics. Pumpernickel bread is made from coarsely ground rye flour with a sourdough starter to aid in rising. Reader'sDigest.ca notes that traditional pumpernickel bread has a much lower GI when compared to whole wheat bread. The ascetic acid produced by the sourdough starter and the soluble fiber of the rye flour give pumpernickel its low GI. When choosing a pumpernickel, look for a German bread and whole rye kernels on the label. A traditional loaf may have a GI of about 46 according to GIListing.com. A GI under 55 is considered low. I'm not sure if all the ingredients are readily available in Thailand.
