The words "ageless" and "timeless" mean something else: abiding, continuing, enduring, eternal, everlasting, immortal,

I think it might be better just to say it this way:

Those words also speak to the character and not just age. Yes, the sentence does talk about age, but not necessarily just "younger than their actual age". 

The last guy I met on that trip looked 23 and was closer to 40.

So you merely described how he "looked"?

You didn't say anything about character, personality or life experiences.
