I use mine a lot for making dried beans instead of canned, all kinds of soups, and bigger roasts that take longer to really render out and tenderize. The only thing that takes some getting used to is adjusting the liquid amounts when cooking under pressure. For example, the first time I made rice in it I just followed my normal recipe (I use the hack of measuring the water line based on your index finger's first knuckle) and it was way too much liquid! The rice was too mushy. The second time I reduced by a bit and it turned out much better! If you're making rice I recommend experimenting a bit for ratios, using smaller recipe sizes, before you cook up a giant batch! There are a TON of great recipes for the InstantPot out there too!
