Well summer is in full swing and some of us get tired of eatting Meat  (I mean burgers and hotdogs).  So I have a quick and easy recipe, that's healthy too.  I call it "Pina-colada Shrimp".  Serve with brown rice, couscous or Quinoa and a cool, crispy green salad.

1+ lb raw shrimp, cleaned and deveined

1 can Goya coconut milk

1 can crushed pineapple with juice

Marinate shrimp in 1/2 can coconut milk and 1/2 can crushed pineapple for at least 1-2 hrs.

Then, pour remaining milk and pineapple into skillet, and add the marinade to it.  Add 2 pats of butter and 1 teaspoon corn starch or flour for thickening.  Heat until low boil.

Dump in the shrimp and cook until done, and they are an opaque orangy color.....  Serve over the grain of choice and soak with the coconut milk sauce.  If serving guests, Fresh pineapple wedges on the side is a nice touch...   ENJOY !
