Members Suckrates Posted May 4, 2017 Members Posted May 4, 2017 From Grandma's Kitchen Since retirement, I am spending alot of time in the kitchen, experimenting with new and diff recipes, which I find enjoyable and relaxing.. One of my favorite genres is BALLS... whether they be meat based or vegan. The one I share today is a combo of 2 worlds, meat & Veggie.... Spinach Parmesan Sausage Balls.... 16 oz bag frozen chopped spinach, thawed and drained (make sure to squeeze all the water out, best way is thru a terry towel) 1 lb sausage meat (whatever you like) casings REMOVED and lightely browed in olive oil 1/2 cup bread crumbs 2 eggs, lightly beaten 1/2 cup grated parmesan + 1/4 cup for dredging. combine the spinach and browned sausage meat. Add bread crumbs and eggs. Add enough milk to keep mixture moist BUT NOT WET.... If too wet, add more bread crumbs. mixture. Add grated cheese and mix well... Spray large cookie sheet with Pam, or coat lightly with olive oil Roll mixture into medium sized balls, then dredge in grated parmesan cheese. Place balls on cookie sheet and BAKE at 375 degrees for about 40 minutes. Balls should be nicely browned and Firm.... Delish ! You can use as a main dish with a salad or as an appetizer with marinara dipping sause, or simply as a side to fish, chichen or meat dish... Quote
