Dodgy practice at Villa Supermarket

Whilst shopping at Villa this morning I noticed what I thought was a decidely bad practice. One of the guys went throught the cheese on display, and took all the ones with expired sell by dates away to the back counter. There he unwrapped them, and using a knife and bare hands shaved off a little from each surface, then re-wrapped and re-wieghed.

Lo and behold, back on display, refreshed and no longer expired.

No problem at all , old cheese is delicious :p:lol:

In the old days cheese was never wrapped and there was no expiring date on it .

I am very familiar with it because I was born in GOUDA , the famous cheese town in The Netherlands.

But of course the shop employe should change the wrapping in a place not visible for customers .

The price must even be higher after the renewed wrapping , because old cheese is more expensive than young cheese.

I don't know much about cheese except for what I like, so I'm asking this question seriously, not tongue-in-cheek. Why "shave" the cheese and why is there an expiration date at all?

I imagine if the cheese is not chilled at the right temp there would be mold growth which is not pretty to look at, but not harmful (I think).
