One of the guys went throught the cheese on display, and took all the ones with expired sell by dates away to the back counter. There he unwrapped them, and using a knife and bare hands shaved off a little from each surface, then re-wrapped and re-wieghed. Lo and behold, back on display, refreshed and no longer expired. Quote

I am very familiar with it because I was born in GOUDA , the famous cheese town in The Netherlands. But of course the shop employe should change the wrapping in a place not visible for customers . The price must even be higher after the renewed wrapping , because old cheese is more expensive than young cheese. Rene Quote

I don't know much about cheese except for what I like, so I'm asking this question seriously, not tongue-in-cheek. Why "shave" the cheese and why is there an expiration date at all? Quote
