And I have to correct some misperceptions. "Hotel" is the term used in Australia to describe a bar. The title is anachronistic but Aussies recognise it and do not expect to stay overnight! There are quite a few gay bars. (And overnight hotels in Australia are not allowed to discriminate by law. I have never experienced any problem or attitude on checking in with my much-younger boyfriend - except once, when we were warmly greeted as a couple by the (straight) manager and promptly upgraded.) Sex-work is indeed legal and sex-workers are supposed to be registered. Many 'amateurs' do not register. There are quite a few brothels for heterosexuals, but I am only aware of 2 gay brothels in the city. Tipping is unusual in Melbourne whereas it is more common in Sydney, perhaps because it's more visited by US tourists and businessmen. Good service in high-end restaurants may merit a tip of 10%; the regulars in a good cafe may round up the check; taxi-drivers never expect a tip, and I have had taxi-drivers round down the fare to the next $. And finally, you omitted one of the most attractive, mixed gay and straight areas - St Kilda - which is close to the central business district and offers beaches with restaurants and cafes galore. I think that some bars have a nominal room or two that is supposedly available for rent. This was originally intended as a way to get around drinking hour laws, which allowed hotels to keep their bars open during hours when bars were supposed to be closed. Even in Pennsylvania when I was young, hotels could serve liquor on Sunday but bars could not, so some bars claimed to be hotels. Quote

A bar that serves liquor must derive 75% of its' revenue from food. We have beer joints that mainly serve beer and a few snacks. Liquor stores are the only stores that can sell liquor and wine. Beer can be sold by grocery stores and the like. No liquor stores are open on Sunday and beer cannot be sold before noon on Sunday. Bars, co-located with restaurants, can serve mixed drinks and beer until the wee hours and all day Sunday. Many states have "unusual" alcohol laws and TN certainly does not stand alone in this regard.
