I keep my 24 most used apps on the home screen of my iPhone 5, and everything else is in a folder on the second page categorized by application category. Here are the apps on my home screen at the moment: Calendar Camera Chrome Clear Clock Due Fieldrunners 2 Fog of World Foresquare Google Maps H1CX+ (the worlds greatest RPN calculator!)
