TotallyOz Posted October 17, 2010 Posted October 17, 2010 Shrimp and Asparagus Stir-Fry Makes 4 Servings Ingredients: • 1 tablespoon peanut oil • 1 teaspoon chopped garlic • 1 teaspoon chopped ginger • 1 pound asparagus, trimmed and cut into 1 ~" lengths • 1 cup thinly sliced shiitake mushrooms • 1 pound shrimp, peeled and deveined • Freshly ground black pepper • 1/4 cup low-sodium soy sauce Cooking Instructions: 1. Heat the peanut oil in a skillet or wok(large enough to accommodate all the ingredients) over medium-high heat 2. Add the garlic and ginger and stir quickly for 30 seconds 3. Increase the heat to high. Add the asparagus, then the mushrooms, then the shrimp, stirring quickly after each addition. 4. Season with pepper. S. Add the soy sauce and cook until the shrimp are fully cooked and opaque, about 2 minutes. 6. Serve with brown rice.
